1/2c sifted confectioners sugar
4 eggs, beaten
2c granulated sugar
1/3c lemon juice
lemon zest–as much you can get from the lemons before you juice them
1/2t baking powder
sift together 2c flour and confectioners sugar. Cut in butter in a large bowl until mixture clings together. Press into 9×13 baking pan. Bake at 350F for 20-25 minutes or until lightly browned. Beat together eggs, granulated sugar, lemon zest and lemon juice. Sift 1/4c flour and baking powder together, then stir into egg mixture. Pour over baked crust. Bake at 350F for 25 additional minutes. Sprinkle with additional powdered sugar. Cool and cut into bars. Try also with LIMES. Add 2 drops green food color.
